Palak Paneer (Stir-fried spinach with cottage cheese) recipe
ingredients
1 kg (2.2 lb) Spinach (palak)
400 g (14 oz) Cottage cheese (paneer), cubed
4 tbsp (60 ml) 2 fl oz Vegetable oil
1 tsp (2 g) Cumin (jeera) seeds
10 g Garlic (lasan) cloves
2 Dry red chillies (sookhi lal mirch)
1/2 tsp Coriander (dhaniya) powder
1/2 tsp Cumin (jeera) powder
1/2 tsp (1 g) Red chilli powder
Salt to taste
method
1. Blanch the spinach and drain. When cool, chop coarsely.
2. Heat the oil in a wok (kadhai); add cumin seeds and garlic; saute until the garlic changes colour. Add dry red chillies and stir for 1/2 a minute. Add spinach, coriander powder, cumin powder, and red chilli powder. Mix well.
3. Add the cottage cheese and stir-fry for 5 minutes. Season with salt. Serve hot.
