Basundi (A rich creamy south Indian pudding) recipe
ingredients
10 cups (2 litres) 64 fl oz Full-cream milk
1/2 cup (75 g) 2 1/2 oz Sugar
6 Green cardamom (choti elaichi), powdered
a pinch Saffron (Aesar), soaked in 1/2 cup warm milk
1 tbsp (15 g) Pistachios (pista), finely chopped
method
1. In a heavy-bottomed pot, cook the full-cream milk till it is reduced to less than half its amount. Add the sugar and green cardamom powder. Cook for 6-7 minutes more, stirring continuously.
2. Add saffron and mix well. Remove and keep aside to cool.
3. Sprinkle the pistachios on top and serve chilled in individual bowls.
