Pease Pudding #2

ingredients

serves 10
400 g yellow split peas
2 carrots
1 onion clout©
75 g butter
75 g bacon trimmings or ham bone
seasoning

method

1. Wash the split peas, place into a saucepan and cover with cold water; bring to the boil and skim.

2. Add the carrots, onion and bacon, cover with a lid and cook in the oven at 180°C for 1 hour.

3. Remove and discard the whole vegetables and bacon trimmings; pass the peas through a sieve, return to a clean pan, mix in the butter and season.

4. Serve dome-shape as a vegetable or as an accompaniment to a main item, decorated scroll-fashion with a palette knife.
