1. Heat the fat in a thick-bottomed roasting tray on the stove.
2. Add the dried, trimmed potatoes and roll them over heat until lightly coloured.
3. Season with salt and place into the oven to roast at 220°C for 30-40 minutes. To test if the potatoes are cooked, press gently with the fingers.
4. When golden brown and cooked, drain off the fat and serve the potatoes in a vegetable dish.
