method
1. Lightly fry 75 g chopped onion in 50 ml oil or ghee, add 3 chopped cloves of garlic, 1 tsp grated root ginger and 25 g chopped coriander leaves, then stir in 1 tsp turmeric, 1/2 tsp chilli powder, 450 g quartered button mushrooms, 10 new potatoes, 225 g peas and 125 ml stock or water.
2. Cover with the lid and cook for 10 minutes, then sprinkle with 1 tsp garam masala and continue to cook for a further 10 minutes. Season and serve in a vegetable dish.
