method
1. Cut the peeled carrots and turnips into 8 mm dice and the beans into diamond-shapes.
2. Place the carrots into a shallow pan and barely cover with cold water. Add salt, sugar and 25 g of the butter, cover with a lid and boil for 3 minutes.
3. Add the turnips and continue to boil until both are cooked and the liquid has evaporated, leaving the vegetables glossy.
4. Boil and drain the beans and peas, add to the carrots and turnips and toss to mix. Serve dome-shape in a vegetable dish.
