Poulet au Roquefort

ingredients

serves 4
4 chicken pieces
15 g (1/2 oz) butter
salt and pepper
300 ml (1/2 pt) yoghurt
100 g (4 oz) Roquefort or other blue cheese
10 g (2 tsp) cornflour
15 ml (1 tbsp) water

method

1. Brown the chicken in butter and remove it to a casserole. Season well.

2. Blend the yoghurt and blue cheese together until the mixture is smooth.

3. Mix the cornflour and water and add to the yoghurt mixture.

4. Pour over the chicken. Cover and bake at 180°C (350°F) Gas 4 for 50 minutes.

5. Uncover and return to the oven for a further 10 minutes
