1. You will need 4 large or 8 small skewers to prepare the kebabs. If cocktail sausages are not easily available simply twist the longer chipolata-type sausage into two.
2. Roll the bacon after flattening each rasher with a knife. Each rasher will make 2 small rolls.
3. Remove the mushroom stalks and cut the peppers into squares.
4. Thread sausages, bacon, mushrooms, peppers and bay leaves alternately onto the skewers. Lay in a flat dish and pour the oil over. Season well.
5. Turn in the oil for 5 minutes until well coated.
6. Prepare the Tomato Sauce.
7. Put the kebabs under a high grill and turn the skewers round every 2 minutes until the food is evenly browned on all sides.
8. When it is golden brown turn the heat to medium and cook for 3 - 4 minutes each side.
9. Lay the tomatoes on the grill for the last few minutes of cooking. (Tomatoes are best cooked separately as they tend to fall off skewers when cooked.)
10. Lay the kebabs on a bed of rice and serve with the Spicy Tomato Sauce. If you wish to remove the skewers use a fork to slide the food off.
