Mixed Sweet Pickle

ingredients

3/4 cucumber, washed
450 g (1 lb) tomatoes, halved and seeded
700 g (1 1/2 lb) marrow, peeled and seeded
900 ml (1 1/2 pt) malt vinegar
300 ml (1/2 pt) white vinegar
350 g (4 lb) demerara sugar
20 ml (4 level tsps) salt
30 ml (2 level tbsps) turmeric
2.5 ml (1/2 level tsp) ground mace
2.5 ml (1/2 level tsp) ground mixed spice
2 large pieces root ginger, bruised
2.5 ml (1/2 tsp) celery seed

method

1. Mince the vegetables coarsely.

2. Add the vinegars, sugar, salt and spices and the ginger and celery seed tied in muslin.

3. Stir, bring to the boil and simmer for 3 hours, until dark in colour and of a fairly thick consistency.

4. Remove the bag of spices, pour into warm jars, seal and store in a cool place.
