1. Preheat the oven to 130°C (250°F) gas mark 1/2.
2. Mix the sugar and oil, add salt to taste and spread the mixture in the bottom of an ovenproof dish.
3. Arrange the tomatoes on top, cut-side down, in one layer.
4. Bake in the oven for 1 hour, until the liquid has evaporated.
5. Serve around fish or meat, or on pasta or rice.
