Meringue Glace Chantilly

ingredients

serves 8
250 ml (8 fl oz) vanilla ice cream
16 small meringue shells
125 ml (4 fl oz) double cream (heavy cream)
caster sugar (superfine granulated) to taste
8 maraschino cherries, to decorate

method

1. Place a scoop or slice of ice cream in each of 8 small oval dishes.

2. Set a meringue shell on either side of the ice cream.

3. In a bowl, whip the cream until stiff.

4. Sweeten to taste, then spoon into a piping bag.

5. Pipe a large rose of the cream on top of the ice cream.

6. Decorate with the cherries.
