method
1. Slash the chicken breasts vertically, but do not cut all the way through.
2. Place on individual pieces of foil large enough to make a secure parcel around the chicken.
3. Peel and remove all the flesh from the mangoes and discard the stones.
4. Place the flesh in a bowl with the ginger and mash with a fork.
5. Spread evenly over the chicken and season.
6. Seal the foil around the chicken and place on a baking sheet.
7. Cook at 190°C (375°F) gas mark 5 for 25 - 30 minutes, until the chicken is cooked through.
8. Open the parcels and garnish with the lime and coriander sprigs.
9. Serve immediately, leaving the chicken in the foil.
