125 ml (4 fl oz) double cream (heavy cream)
2 tbsp fresh grated horseradish
1 tbsp white wine vinegar or lemon juice
2 tsp caster sugar (superfine granulated)
1/2 tsp made English mustard
salt and pepper
2 tsp vinegar
1 tsp chopped capers
salt and pepper
caster sugar (superfine granulated)
method
1. Whip the cream lightly until semi-stiff.
2. Carefully fold in the other ingredients.
3. Chill until ready to use.
4. Serve with beef.
