Peanut Butter Bread and Butter Pudding

ingredients

serves 2
2 slices of bread
110g/4oz peanut butter
2 eggs
125ml/4fl oz double cream
2 tbsp milk
55g/2oz soft brown sugar
1 orange, peeled and sliced
To serve
icing sugar, to dust
sprig of fresh mint

method

1. Preheat the oven to 220C/425F/Gas 7.
2. Spread the bread slices with the peanut butter and then line the base of a small ovenproof dish with the peanut butter bread.
3. Whisk the eggs together in a bowl until light and fluffy.
4. Add the cream, milk and sugar to the bowl and whisk again until combined.
5. Pour the mixture over the bread and top with the orange slices.
6. Bake in the oven for 8-10 minutes.
7. Remove from the oven and dust with icing sugar.
8. Finish with a sprig of mint and serve.
