4 1/2 oz (120 g) macaroni
3 pt (1.7 L) boiling water
salt and freshly ground black pepper
4 tbsp oil
1/4 cup (1 oz) 30 g plain flour (All purpose)
2 3/4 cups (21 fl oz) 600 ml milk
2 oz (50 g) onion, minced
2 tsp dry mustard powder
3 oz (75 g) Cheddar cheese, grated
8 oz (225 g) french bean (green bean)s, cooked
3 - 4 hard-boiled eggs, sliced
method
Preheat the oven to 350°F (180°C) Gas Mk 4.
1. Add the macaroni to a large pan of salted boiling water with a dash of oil added. Cook, then drain and rinse with fresh boiling water.
2. In the meantime, blend the oil and flour together over low heat in a small saucepan, stir in the milk and cook until thick.
3. Stir in the onion and mustard, and season to taste with pepper and salt.
4. Remove from the heat and add 2 oz (50 g) of the cheese.
5. Arrange the macaroni, beans and eggs in layers in an ovenproof dish.
6. Pour over the sauce and sprinkle over the remaining cheese.
7. Cover and bake in the oven for 30 minutes.
8. Remove the cover and continue to bake until the top has browned.

Macaroni and egg casserole

Absolutely yummy. I never would have thought of adding hard boiled eggs but its delicious, with the french beans its a sort of macaroni cheese nicoise! Delicious, easy, and most of all very cheap to buy ingredients.
