Vegetable and Fruit Cup

ingredients

serves 4
2/3 cup (150 ml) 1/4 pint carrot juice
1 1/4 cup (1/2 pint) 300 ml apple juice
2/3 cup (150 ml) 1/4 pint orange juice
1/4 cucumber, peeled and sliced
6 ice cubes fresh mint sprigs

method

1. Blend together the juices, cucumber and ice cubes in an electric blender until smooth.

2. Pour into individual glasses and float a sprig of mint on top of each glass.
