Chicken Jambalaya

ingredients

serves 4
6 tbsp oil
4 chicken joints
8 oz (225 g) ham, diced
1 green pepper, deseeded and chopped
2 onions, chopped
1 garlic clove, crushed
6 oz (175 g) long-grain rice
2 3/4 cups (21 fl oz) 600 ml stock
8 oz (225 g) frozen peas
chopped pimentos, to garnish

method

1. Heat the oil and brown the chicken joints and ham.

2. Add the green pepper, onions and garlic and fry gently, without browning, for 5 minutes.

3. Add the rice and stock, season with salt and pepper, cover and simmer until cooked - about 20 minutes.

4. Add the peas and simmer for 10 minutes.

5. Garnish with pimentos to serve.
