1. Preheat the oven to 375°F (190°C) Gas Mk 5.
2. Melt the butter in a saucepan, and stir in the breadcrumbs, garlic, walnuts and orange rind.
3. Simmer over low heat, stirring from time to time, until the breadcrumbs have absorbed the butter.
4. Arrange the cod in a buttered ovenproof dish and season to taste with salt and pepper.
5. Pour over the orange juice, then cover with the breadcrumb mixture.
6. Bake in the oven for 20-30 minutes until the fish is tender.
