350 g (12 oz) new potatoes, cooked and diced
4 large oranges, peeled and segmented
2/3 cup (150 ml) 1/4 pt mayonnaise
1/2 cup (75 g) 3 oz almonds, toasted
Small pinch salt
1 lettuce, Cos-type
Small carton cress
Few sprigs of fresh mint, chopped
method
1. Mix together the diced potatoes, orange segments, mayonnaise, toasted almonds and salt.
2. Arrange the lettuce leaves round a suitable salad bowl, so that they form a lining.
3. Into the centre of this, pour the potato mixture.
4. Garnish with cress and chopped mint. Chill well before serving.
