Green Soup

ingredients

serves 8
5 medium potatoes, peeled and diced
1 large onion, peeled and chopped
110 G (4 oz) kale leaves, coarsely chopped
4 large cloves of garlic, peeled and chopped
1 1.2 tsp salt
4 cups (1 litre) 1 3/4 pint water
1 tbsp good olive oil
Good grinding black pepper

method

1. In a large saucepan put the potatoes, onion, kale, garlic and salt.

2. Pour in the water and bring to the boil.

3. Cover, lower the heat and simmer gently for about 1 hour.

4. Either blend with an electric mixer or pass through a sieve so that you have a smooth, creamy liquid.

5. Return to the saucepan, check the seasoning and add more water if too thick.

6. Just before serving add the olive oil and black pepper.
