1 kg (2 1/4 lb) potatoes, scrubbed
3 medium onions, peeled and chopped
1/2 stick (2 oz) 50 g butter
1/3 cup (50 g) plain flour (All purpose)
1 pt (600 ml) warm milk
1 lb (450 g) Frankfurter sausages, sliced
3 tbsp parsley, chopped
4 tbsp pure apple juice
Salt and pepper to taste
Good pinch grated nutmeg
method
1. Cook the potatoes until just tender.
2. Drain and peel while still warm.
3. Cut into thick slices.
4. Saute the onions in the butter until just transparent.
5. Add the flour and stir well.
6. Gradually stir in the warm milk and bring to a simmer. Cook for about 4 minutes.
7. To this sauce add all the other ingredients, warming up again if necessary.
