8 oz (225 g) sweet potatoes, peeled and sliced
1 1/2 cup (175 g) 6 oz cooking (tart) apples, peeled and grated
3 medium bananas, sliced
Salt and pepper to taste
1 tsp paprika
2 tbsp (1 oz) 25 g butter
3/4 cup (150 ml) 5 fl oz apricots, sieved
method
1. Mix together the sliced potatoes, grated apples, sliced bananas, salt, pepper and paprika.
2. Put the mixture into a well greased casserole dish, dot with the butter and bake in a moderate oven Gas mark 3, 325°F (170°C) for 1 hour.
3. Remove from the oven and spread over the apricot puree.
