method
1. Mash the potatoes thoroughly while still warm, then add the butter and stir in the dry ingredients.
2. Beat the egg and add to the potato mixture, blending well to make a smooth dough.
3. Turn the dough on to a floured surface and roll to a thickness of 2.5 cm (l in).
4. Cut into 5 cm (2 in) rounds, place on a greased baking tray and bake in the oven Gas mark 7, 425°F (220°C) for 20 minutes or until nicely browned.
5. Serve hot or cold, buttered like scones.
