1. Peel shallots and garlic. Wash and dry steaks.
2. Heat oil in heavy-bottomed pan and toss coriander in it quickly. Season steaks with salt and pepper, before browning over a high heat for 1 minute on each side. Remove steaks from pan.
3. Saute shallots in remaining oil, adding crushed garlic and juice from tomatoes.
4. Roughly chop tomatoes and put into sauce, then season with crumbled stock cube, sugar and cayenne pepper. Reduce slightly, stirring constantly.
5. Put steaks into sauce, together with any juice that has collected. Cover pan and warm through over a low heat for 5 minutes.
6. Wash, dry and chop parsley, then sprinkle over dish.
Serve with noodles.
