Turkey Steaks with Coriander


serves 4
4 turkey steaks weighing 150 g (5 oz) each
250 g (9 oz) shallots
1 garlic clove
4 tbsp oil
1/2 tbsp crushed coriander
4 pinches salt
4 pinches freshly ground black pepper
1 small can peeled tomatoes 400 g (14 oz)
1/2 chicken stock cube
1/2 tsp sugar
2 pinches cayenne pepper Small bunch parsley


1. Peel shallots and garlic. Wash and dry steaks.

2. Heat oil in heavy-bottomed pan and toss coriander in it quickly. Season steaks with salt and pepper, before browning over a high heat for 1 minute on each side. Remove steaks from pan.

3. Saute shallots in remaining oil, adding crushed garlic and juice from tomatoes.

4. Roughly chop tomatoes and put into sauce, then season with crumbled stock cube, sugar and cayenne pepper. Reduce slightly, stirring constantly.

5. Put steaks into sauce, together with any juice that has collected. Cover pan and warm through over a low heat for 5 minutes.

6. Wash, dry and chop parsley, then sprinkle over dish.

Serve with noodles.

Simple but lush!

I'd never cooked turkey steaks before and wanted a quick and simple recipe for my first bash. Didn't have any shallots in the cupboard so used 2 x red onions, finely chopped instead. This made a lovely sauce and the turkey steaks were really tender. Great recipe and so easy and quick to throw together - we served with new potatoes and mixed veg.

Had some turkey steaks so googled some recipies and this was closet to what I had. Used ground coriander, onions like the above, no sugar or parsley but was a really nice meal and highly recommended. Served with mixed veg.
