1.5 litres (2 3/4 pints) meat stock
3 tbsp medium cream sherry
125 ml (4 fl oz) single cream

method
1. Fry onion, garlic and ginger in heated cooking oil until onion is translucent.
2. Add curry powder and fry for 1 minute.
3. Add mince and fry until it turns colour.
4. Add remaining ingredients except sherry and cream.
5. Simmer for 30 to 45 minutes.
6. Remove cinnnamon and bay leaf and stir in sherry and cream.
