Meat Loaf with Banana

ingredients

serves 6
750 g (1 1/2 lb) minced beef
250 g (8 oz) minced lean pork
2 slices white bread
1/3 cup (3 fl oz) 90 ml milk
1 onion, grated
4 tsp prepared mustard
2 tsp salt
freshly ground black pepper to taste
3 bananas, peeled and mashed
250 g (8 oz) rindless streaky bacon
3 hard-boiled eggs, shelled

method

1. Soak the bread in the milk, squeeze out and add to mince.

2. Mix in remaining ingredients except bacon and eggs.

3. Grease a loaf tin or terrine and line it with the bacon.

4. Spoon in half the meat mixture and arrange hard boiled eggs down the middle.

5. Spoon remaining mince on top and bake at 160°C (325 °F) gas 3 for 1 hour or until mince is cooked.

6. Allow to stand for approximately 10 minutes before turning out onto a meat platter.
