20 g (3 tbsp) cardamom seeds
3 x 2.5 cm (1 in) cinnamon sticks
5 g (1/2 tbsp) cumin seeds
2.5 g (1/2 tsp) black peppercorns
2.5 g (1/2 tsp) cloves
1/4 of a nutmeg
method
Grind all the spices together until they are finely ground.
Store in a spice bottle until required. (The ingredients may be added in different proportions to suit individual tastes) .
