1. Skin the hake fillets. Combine all the remaining ingredients and spread a generous amount along each fillet. (Reserve any remaining sauce.)
2. Roll up the fillets towards the tail end, and arrange in a lightly buttered baking dish. Bake in a moderate oven180°c (350°f) gas 4 for 20 minutes.
3. Serve on warmed plates with the reserved sauce on the side.
