Bread stuffing can be used for any poultry; turkey, chicken...etc You can use it to stuff the neck end of a turkey or other small bird, or choose to bake it in an ovenproof dish in the oven.
ingredients
10 slices bread
1 onion., peeled and finely chopped
2 celery stalks, finely chopped
2 cloves
1 tbsp finely chopped fresh parsley
1-2 tsp finely chopped fresh tarragon., chervil., thyme, chives or other herbs, depending on taste and availability
salt
2 tbsp lightly beaten egg
pepper
1/4pt (140ml) milk
method
1. tear the bread into tiny pieces.
2. Put the milk, onion, celery and cloves in a saucepan and simmer for 8-10 minutes. Strain, keeping the milk and vegetables separate. Discard the cloves.
3. Mix the bread, herbs and vegetables and season lightly. Stir in the egg and enough milk to bind together.
