Raisin and Honey Bread (Low-fat)

ingredients

makes one loaf
2 2/3 cup (300 g) plain flour (All purpose)
1 1/2 tsp baking powder
1/2 tsp Bicarbonate of soda (Baking soda)
1 1/4 cup (1/2 pint) 300 ml plain yogurt
2 egg whites
1/4 cup (1 3/4 oz) 50 g raisins
2 tbsp honey
butter for greasing

method

1. Pre-heat the oven to 425°F (220°C) gas mark 7.

2. Mix the flour, baking powder, bicarbonate and salt in a large bowl.

3. Whisk together the yogurt and egg whites and fold into the flour mixture with the raisins and honey.

4. Grease a large loaf tin and spoon in the mixture.

5. Bake for 20 minutes until golden.

6. Cool slightly and turn out of the tin.

7. Serve warm.
