method
1. Sift the flour and salt.
2. Cream the yeast with the sugar. Mix into the flour with the egg milk, and butter.
3. Beat thoroughly, then leave to rise in a warm place until double its bulk.
4. Turn out on to a floured board and knead lightly. The dough is now ready to be made up in various ways.
5. For an apple kuchen, work 2 oz well-cleaned raisins into the dough.
6. Shape into a large bun with the hand and put into a lightly greased cake or deep sandwich tin.
7. Flatten top with your fist and cover with quartered sliced apple pressing the sharp edge of the slices into the dough.
8. Brush lightly with a thin syrup or water, sprinkle thickly with caster sugar mixed with a little cinnamon, and leave to prove for 20 minutes.
9. Bake in a hot oven for 40 - 45 minutes.
