100 - 175 g (4 - 6 oz) cooked crabmeat
5 g (1 tsp) sugar
1 small piece ginger, scraped and crushed in garlic press
10 ml (2 tsp) light soy sauce
seasoning
4 eggs, beaten
a little butter or oil for frying
4 - 6 spring onions, finely chopped
method
1. Pick over the crabmeat to remove any shell or cartilage.
2. Stir into it the sugar, ginger and soy sauce and season to taste.
3. Add this to the beaten eggs and scramble in fat in a pan for 1 minute.
