1. Melt the fat in a frying pan and fry the onions gently until they are softened. Remove from the heat.
2. Line a casserole with bread slices. Cover with a layer of onions, then a layer of grated cheese and then a layer of bread fingers.
3. Continue making layers in this way to fill the casserole, ending with cheese. Add salt and pepper.
4. Pour the stock into the frying pan and bring to the boil.
5. Pour into the casserole, then bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 30 minutes.
6. Serve hot, garnished with parsley.
