Guinness Stew

ingredients

serves 4
25 g (1 oz) lard
2 onions, sliced
2 garlic cloves, crushed
1/2 green pepper, cored, seeded and chopped
1 lb (450 g) stewing steak, cubed
4 oz (100 g) mushrooms, sliced
1 1/4 cup (300 ml) 1/2 pint canned Guinness
1 teaspoon dried rosemary
1 teaspoon chopped parsley
1 teaspoon garam masala
salt and pepper

method

1. Melt the lard in a flameproof casserole.

2. Add the onions, garlic and green pepper and fry until softened.

3. Add the steak cubes and brown on all sides.

4. Stir in the remaining ingredients and bring to the boil.

5. Cover the casserole. Transfer to a preheated moderate oven 180°C (350°F) Gas Mark 4 and cook for 1 1/2 hours or until the meat is tender.
