50 g (2 oz) margarine or butter
12 big flat mushrooms, 350 450 g (12 oz 1 lb), stalks removed and chopped
75 g (3 oz) spring onions, trimmed and snipped
225 g (8 oz) frozen peas
salt and freshly ground pepper
method
1. Melt the margarine in a pan and gently fry the mushroom stalks and spring onions. Stir in the frozen peas and season well.
2. Arrange the mushrooms in a single layer in a baking dish. Spoon the pea mixture on top. Cover and cook at 180°C (350°F) mark 4 for about 30 minutes.
