method
1. Cut horizontally across the pork fillets, stopping just short of the edge. Break up the bread and soften it in cold water. Finely dice the garlic.
2. Squeeze excess moisture from the bread and mix it with the garlic, chopped herbs, cream, salt and pepper. Spread
each fillet with some of the mixture and press the meat firmly together.
3. Brush a grill pan with oil and grill the pork fillets under a moderate heat for 20 minutes, turning them frequently and brushing with oil each time you turn them.
This recipe is just as good using entrecote steaks or lamb fillets.
