225 g (8 oz) self- raising flour
1 teaspoon mixed spice
1/2 teaspoon grated nutmeg
150 g (5 oz) margarine
75 g (3 oz) demerara sugar
150 g (5 oz) mixed dried fruit
1 egg, lightly beaten
2 tablespoons milk
1. Grease 2 baking trays. Sift the flour and spices into a bowl. Rub in the margarine until the mixture resembles fine breadcrumbs.
2. Stir in the sugar and fruit, then mix in the egg and milk to make a fairly stiff mixture. Place eight spoonsful of the mixture well apart on the baking and bake in a moderately hot oven for 20 minutes.
3. Cool on a wire rack. These cakes are best eaten on the same day as baking.
When rubbing fat into flour use only fingertips. Keep fingers spaced apart and lift the ingredients, rubbing quickly and lightly to make a light mixture which is not sticky.
