Serve stir-fried celery as part of a Chinese meal that you have prepared yourself or bought from a takeaway. It goes well with almost any meat or fish dish, or with a savoury flan or a vegetarian dish such as macaroni cheese.
ingredients
1 head celery, stalks cut into 1 cm (1/2 inch diagonal slices
1 - 2 tablespoons vegetable oil
3 spring onions, thinly sliced
salt and freshly ground black pepper
2 tablespoons flaked almonds
2 tablespoons dry sherry
1 teaspoon soy sauce
1 teaspoon tomato puree
1/2 teaspoon caster sugar
1/4 teaspoon ground ginger
method
1. Heat the oil in a large frying-pan. Add the sliced celery and spring onions and season with salt and pepper. Stir-fry over moderate heat for 5-7 minutes, until the celery has lost its raw taste but is still crunchy. Add the flaked almonds and stir-fry for 1 minute.
2. Mix together the remaining ingredients, pour into the pan and stir-fry for 2 minutes. Serve at once.
