Chocolate Sauce #2

A chocolate sauce great for serving with ice-cream or for pouring over profiteroles.

ingredients

2 tbsp (1 oz) 25 g butter
1 1/2 oz (40 g) cocoa, sieved
4 fl oz (120 ml) boiling water
3/4 cup (150 g) granulated sugar
few drops vanilla essence

method

1. Melt the butter in a small pan, then remove from the heat and stir in the cocoa.

2. Mix well and gradually add the boiling water.

3. Stir in the sugar, bring to the boil and simmer for about 5 minutes, without stirring.

4. Take great care as it can boil over.

5. Remove from the heat and stir in the vanilla essence.
