4 large bananas
55 g (2 oz) walnuts
55 g (2 oz) pecans
1/4 cup (55 g) 2 oz dried apricots, halved
4 tsp honey
pinch of cinnamon
For serving:
low-fat creme fraiche
method
1. Preheat the oven to 190°C (375°F) gas mark 5.
2. With the skin still on, make a split down the length of the bananas. Fill with a mixture of walnuts, pecans, and apricots.
3. Drizzle each with honey and a sprinkle of cinnamon and wrap in foil. Bake for 20 minutes in the oven.
