method
1. Preheat the oven to 375°F (190°C) Gas Mk 5.
2. Mix together the bacon, mushrooms and onion.
3. Add salt and freshly ground black pepper to taste.
4. Measure out four squares of aluminium foil and grease lightly.
5. Place a tablespoonful of the bacon mixture on each piece of foil.
6. Place a chicken quarter on top and pour over 1 tbsp of wine, cream or stock.
7. Lightly close the foil to make small parcels and cook in the oven for 45 minutes, opening the foil for the last 10 minutes.
