Pork Schnitzel with Banana

ingredients

serves 6
12 thin slices of pork, cut from the leg
prepared mustard to taste
6 slices ham
6 slices Gruyere cheese
2 bananas, sliced
2 tsp lemon juice
freshly ground black pepper to taste
2 tbsp plain flour (All purpose)
1/2 tsp salt
2 eggs, beaten
1 cup (150 g) dried breadcrumbs
cooking oil for frying

method

1. Flatten each slice of meat slightly with the palm of the hand, then spread each slice with mustard.

2. Place ham, cheese and banana onto six slices of meat.

3. Sprinkle lemon juice over and season with pepper.

4. Place second slice of meat on top and secure with cocktail sticks. Season flour with salt and pepper.

5. Coat meat with flour, then with beaten egg and finally with breadcrumbs.

6. Place in refrigerator for at least 20 to 30 minutes to allow crumbs to set.

7. Fry in heated cooking oil until golden brown and done on both sides.

8. Drain on paper towels and serve immediately.
