1 cup (110 g) yellow cornmeal
1 cup (1/4 lb) 125 g plain flour (bread flour)
1/4 cup (4 tbsp) 50 g sugar
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
1 egg
1 cup (8 fl oz) 250 ml buttermilk
1/4 cup shortening
method
1. Put baking soda in buttermilk and stir.
2. Sift dry ingredients together.
3. Add the egg, buttermilk, and shortening to dry ingredients and beat for 1 minute.
