1. Season the meat and fry in the fat or oil until brown about 5 minutes.
2. Add the bacon and continue cooking for a few minutes. Remove the meat and bacon from the pan
3. Stir in the flour and brown lightly. Gradually add the beer, stock and vinegar, stirring continuously until the mixture thickens.
4. Fill a casserole with layers of meat, bacon, onion and garlic. Pour the sauce over and add the bouquet garni.
5. Cover and cook for 3 1/2 - 4 hours in the oven at 150°C (300°f) GAS mark 2. Add a little more beer while cooking, if necessary.
6. Just before serving, remove the bouquet garni. Serve with plain boiled potatoes.
