4 chump chops
1 green pepper 1 red pepper
3 tbsp oil
1 large onion, sliced
1 clove of garlic, crushed
12 oz (350g) courgette (zucchini)s, sliced
12 oz (350g) tomatoes, peeled and quartered
salt and black pepper
method
1. Remove the core and seeds from the peppers and cut into strips.
2. Heat the oil in a saucepan and add the peppers, onion and garlic. Cover with a lid or foil and cook gently for about 15 minutes until soft but not brown.
3. Meanwhile lightly fry the chops in a frying pan for about 10 minutes or until well browned on both sides.
4. Add the courgettes and tomatoes to the saucepan with the salt and freshly ground pepper and stir well.
5. Arrange the chops on top and cook uncovered over gentle heat for about 15 minutes.
6. Taste and check seasoning. Turn into a hot serving dish and serve immediately.
