2 tsp sesame oil
1 red pepper, deseeded and finely sliced
1/2 jalapeno chilli, finely sliced
1 garlic clove, crushed
125 g (4 oz) broccoli florets
2 spring onions, sliced
2 salmon fillets, about 125 g (4 oz) each, cut into strips
1 tsp Thai fish sauce
2 tsp soy sauce
method
1. In a large frying pan or wok, heat the oil and add the red pepper, chilli, garlic, broccoli and spring onions. Stir-fry the vegetables over a high heat for 3 to 4 minutes. Add the salmon fillets,Thai fish sauce and soy sauce.
2. Cook for 2 minutes more, stirring gently, then serve with wholewheat noodles.
