Cauliflower Cheese #2

ingredients

serves 4
For the cheese sauce
25 g (1 oz) butter or margarine
25 g (1 oz) plain flour
300 ml (1/2 pint) milk
75 g (3 oz) Cheddar cheese, grated
1/4 teaspoon mustard powder (optional)
salt and pepper
1/4 teaspoon grated nutmeg to garnish (optional)

method

1. Trim the cauliflower, cut a cross in the stem and cook in boiling salted water for about 15 minutes. Drain thoroughly, place on a serving plate and keep hot.

2. To make the sauce, melt the butter or margarine over a gentle heat, stir in the flour and cook for 2 minutes.

3. Gradually add the milk, stirring all the time. Bring the sauce to the boil, reduce the heat and simmer gently for a few minutes. Remove the saucepan from the heat.

4. Stir the Cheddar into the sauce with the mustard, if using and seasoning until smooth. Pour the sauce over the cauliflower.

5. Sprinkle the nutmeg over the top, if liked, and serve immediately.

Microwave Tip
All sauces cook well in the microwave. Put all the ingredients in a bowl, whisk well and microwave for 8-10minutes. Whisk thoroughly.
