1. With a sharp knife trim the rind from the gammon and score the fat so that the steaks lie flat.
2. Mix together the lemon rind, oil, salt and pepper. Brush this mixture over both sides of the gammon and cook the steaks under a hot grill for 6 - 8 minutes on each side.
3. Blend the apricots and cider in a liquidiser, then pour into a saucepan. Add the water, walnuts, nutmeg and seasoning to taste to the fruit mixture and bring the sauce to the boil.
4. Reduce the heat and simmer gently for 5 - 10 minutes or until the sauce has thickened.
5. Arrange the gammon steaks on a serving plate, and garnish with grated orange rind. Pour over the sauce, and serve with broccoli and parslied boiled potatoes.
Cook's Tip
The sauce is equally good with pork chops or roast pork. If liked, substitute 225 g (8 oz) sliced apple for the apricots.
