12 slices white bread
butter or soft margarine
dijon mustard
350 g (12 oz) edam cheese, thinly sliced
225 g (8 oz) tomatoes, skinned and thinly sliced
salt and freshly ground black pepper
oil and butter, for shallow frying
gherkins, to garnish
method
1. Spread the slices of bread with butter or margarine and mustard.
2. Sandwich the slices of bread together with the cheese and tomato slices, placing the tomatoes in the centre with plenty of seasoning. Press well together, cut off the crusts and divide the sandwiches into triangles.
3. Heat a little oil and butter and fry the triangles quickly until golden brown on both sides and the cheese starts to ooze.
4. Serve as soon as possible garnished with gherkins.
