1. Skin the sausage and cut it into narrow strips. Cut the cheese into strips. Cut the onions into rings.
2. Deseed the peppers, wash, dry and cut them into strips. Wash, dry and slice the tomatoes. Slice the gherkins. Drain the sweetcorn.
3. Mix all the salad ingredients together in a bowl.
4. Beat the vinegar with the oil, mustard, paprika, salt and pepper, the sugar and cayenne.
5. Fold the dressing into the salad and leave the salad to stand for 20 minutes at room temperature.
6. Serve with: rye bread.
